While vacationing in Grand Cayman most of my meals were prepared restaurant style, however Carsley and I decided to prepare dessert ourselves.
I found an amazing sounding recipe at Let’s Have a Cocktail for Sea Salt Caramel Brownies. Plus, the picture JennyMac has on her site of the brownies made me want to eat my computer just so I could get closer to the chocolaty goodness.
The recipe sounds pretty simple which only means Carsley and I found a way to screw it up.
Our first hitch in Operation Brownie came in the form of cocoa powder. As in, Cayman stores do not sell cocoa powder. Well, being the illustrious bakers that we are we opted for cocoa mix. Yes, I do mean the hot beverage with marshmallows.
In our defense, the ingredients for cocoa mix include cocoa powder with some sugar and salt thrown in. I think it was a pretty brilliant substitute.
Next, came the sugar. Carsley and Brent keep the sugar in the freezer, so our sugar was actually a sugar brick. Sugar bricks don’t mix as well as little bitty grains of sugar. Carsley spent a good 30 minutes trying to break the sugar down in to mixable pieces. I’d say she got about 90% there before we just said, “Screw it.” Our brownies had chunks of sugar throughout them.
In our defense though, in Cayman it’s necessary to keep items like sugar in the freezer, so the ants do not get to it. I think I prefer sugar chunk brownies rather than ant-filled brownies.
According to JennyMac the caramel making process is SIMPLE. She over-estimated our abilities.
The process started out easy and simple enough. JennyMac also advises to not stick your finger into the caramel because “Hot caramel is similar to lava.”
We didn’t stick our fingers into the caramel-lava. We’re not that cooking challenged.
We did, however, stick a plastic spoon into the caramel-lava.
Plastic melts in extreme heat.
Who knew?
Once again, in our defense, JennyMac did NOT warn us about plastic. … … … … I really can’t think of a good excuse for us on this one… …
So we had a second go around with the caramel…
After much anticipation we finally had…
They were so yummy gooey delicious! If you have better baking skill than us you will totally love this recipe!

You should invest in a set of wooden utensils. They resist heat... not flame though =) and won't damage nonstick cookware

I had to laugh at your mishaps...the good news is the next time you make them, you will have learned your lesson and not use a plastic spoon!
